This hearty and comforting chicken bacon ranch casserole is the ultimate weeknight meal. With a creamy chicken filling and tender, cheesy biscuits, it’s both delicious and satisfying.
Ingredients:
- Shredded cooked chicken: 3 cups
- Cream of chicken soup: 2 cans (10.5 oz each)
- Cooked and crumbled bacon: ¼ cup
- Sour cream: 1 ½ cups
- Ranch seasoning mix: 1 packet
- Shredded sharp cheddar cheese: 1 ½ cups (half a bag)
- Junior biscuits: 12 ounces, cut into quarters
Instructions:
- Cook the chicken: If you’re not using rotisserie or canned chicken, boil chicken until fully cooked, then shred.
- Combine ingredients: In a large mixing bowl, combine the shredded chicken, cream of chicken soup, crumbled bacon, sour cream, and ranch seasoning. Stir until well mixed.
- Add cheese: Stir in about half of the shredded sharp cheddar cheese.
- Prep the biscuits: Cut the junior biscuits into quarters.
- Fold in biscuits: Gently fold the biscuit pieces into the chicken mixture until evenly distributed.
- Preheat the oven: Set your oven to 350°F (175°C).
- Grease the casserole dish: Lightly grease a casserole dish with cooking spray or olive oil.
- Assemble the casserole: Pour the chicken and biscuit mixture into the prepared casserole dish, spreading it out evenly.
